[Paraview] Probe one variable

Does anyone know of a way to manually select the variable that is plotted
for a line probe? Currently all those that are loaded in memory get plotted
on the same axis.
The only way I've managed to achieve this so far is to load each block of
data individually and select just one variable to be loaded. However, this
workaround is far too long winded if there are many blocks of data with many
variables. The .pvd fileformat does not appear to offer the functionality to
select variable across a group of files.
Also is there some way to output the probed data as ASCII?
